Всяка партида грозде се преработва отделно, по най-добрия за нея начин. За 22 % от виното алкохолната и малолактичната ферментация протича в бъчвиот френски дъб за 3-4 месеца. Останалата част е ферментирала и отлежавала върху утайки без контакт с дъб
