Winemaker's notes:
The philosophy of the estate is to let nature take its course as much as possible.
The grapes are sorted manually and the juices fermented with wild yeasts in stainless steel tanks in conjunction with thermoregulation.
The different parcels of wine from each village are fermented separately in order that the wines fully express their differences and similarities.

A wine with dazzling character, high minerality. Rich, elegant and full of finesse.
